Joachim Koerper
Chef Joachim Koerper has been the owner and Head Chef of Eleven in Lisbon since 2005, crafting cuisine that celebrates Southern European products—their flavours, colours, and textures. His philosophy is simple: use only natural, fresh ingredients and transform them with creativity into art.
A master of touch and sound, he integrates diverse textures and temperatures into a single dish, creating a fusion that combines Spanish, Portuguese, German, and Italian influences with local Portuguese products.
His illustrious career includes ten years as owner-chef of Girasol in Spain (two Michelin Stars) and stages at legendary three-star establishments: L'Ambroisie in Paris, Moulin de Mougins with Roger Vergé, and Guy Savoy. He has also consulted for Herdade da Malhadinha Nova (17 years) and Palácio 1743.
He helped Quinta das Lágrimas earn a Michelin star, and both Eleven Rio in Brazil and Reid's Palace in Madeira achieved Michelin stars within just eight months of his involvement.
