Chef Lucas Azevedo is a Japanese gastronomy specialist whose deep immersion in Japan set his work apart from Lisbon's proliferating sushi bars.

He began at Bonsai, Lisbon's oldest Japanese restaurant, leading the kitchen for three years. A perfectionist with an academic approach, he spent extended periods in Japan, absorbing authentic techniques and philosophy. This direct contact shaped his vision toward product, dish, and guest with uncommon rigour.

Returning, he launched Izakaya Tokkuri—a pop-up with a Portuguese chef applying his acquired knowledge. He later led the sushi counter at Praia no Parque for two years and collaborated on Harmonia with SakeMico.

His peers recognised him with the Chef de Bancada Award 2020, followed by Mesa Marcada's Chef Revelation 2021. He now leads Ryoshi in Lisbon, his definitive expression of authentic Japanese cuisine.
