Vincent Farges
Chef Vincent Farges is a French chef who has profoundly influenced Portuguese gastronomy, currently leading EPUR in Lisbon where he has maintained a Michelin star for five consecutive years.
Born in 1973 near Lyon, he grew surrounded by nature—harvesting from the garden, fishing, and hunting—experiences that shaped his culinary soul. His mother's Lapin aux olives remains his strongest childhood memory.
At 14, he began training, landing his first job at Michelin-starred Hotel Le Grand Paris. He refined his craft at two-star Hotel Le Juana, developing technical rigor and artistic sensibility.
Invited by Antoine Westermann to lead Fortaleza do Guincho in Cascais, he spent a decade there, becoming a key force in modernizing Portuguese cuisine. He maintained the restaurant's Michelin star, earned "Chef of the Year" 2014 (Boa Cama Boa Mesa), the "Platinum Fork," and the International Academy of Gastronomy's "Chef de L'Avenir" 2013.
At EPUR, he continues his mission: placing solid French technique at the service of exceptional Portuguese products, creating sublime artistic creations defined by passion, precision, and perfectionism.
