Cafe Gleba
Gleba is a return to origins—a bakery built on the philosophy that exceptional bread begins long before the dough is mixed. It starts with the soil, the grain, and a deep respect for traditional methods.
The name reflects its mission: to revive ancient, sustainable cereal varieties grown in Portuguese soil. Gleba works exclusively with 100% local grains, supporting small farmers and preserving agricultural heritage. Every loaf tells a story of the land it came from.
Unlike most modern bakeries, Gleba grinds its own flour daily using traditional stone mills. This ensures the flour is used at the peak of its quality, with no need for colourings or preservatives—just pure, aromatic grain.
The third pillar is natural fermentation. Each loaf undergoes a slow, 24-hour fermentation using old dough (sourdough), a process that develops deep flavour and makes the bread remarkably easy to digest.
Beyond bread, Gleba offers a carefully curated grocery selection—the best accompaniments for its artisan loaves: fine cheeses, cured meats, olive oils, and preserves.
