António Bóia
António Bóia is a master of Portuguese cuisine, respected for creativity, technical precision, and leadership across complex operations.
Born in Bragança, he moved to France at 13, where hospitality work ignited his culinary passion. A Le Cordon Bleu course (1988) launched his career in Michelin-starred kitchens. Returning to Portugal in 1991, he won Toque d'Or and secured bronze with the national team at the 1992 Frankfurt Olympics.
His trajectory includes Penha Longa, Le Méridien, Expo '98, and the Ritz before joining BHolding Group (2006) as Executive Chef. He coached the national junior team and served as WACS international jury member.
Since 2016, he has led culinary direction for JNcQUOI venues, managing over 150 professionals. A disciple of Escoffier, Bóia has represented Portugal worldwide. His motto: "Working hard and being honest is my life motto. Beyond that, let life happen."
