Chef Louise Bourrat is one of Portugal's most innovative and irreverent culinary voices—winner of France's Top Chef 2022 and named Breakthrough Chef in Portugal 2024.

Born in Lyon to a Portuguese mother and French father, she trained at L'École Hôtelière Savoie Léman and began her career at Alain Ducasse's Hostellerie de l'Abbaye de la Celle. Her path took her to Brussels, Le Chalet de la Forêt, and London's Mandarin Oriental Hyde Park, followed by Tom Sellers' Ours alongside her brother Alexis.

After two years traveling Latin America, she arrived in Lisbon in late 2018 to temporarily help at Boubou's—and never left. Her creative, audacious DNA transformed Boubou's into a Lisbon benchmark, earning inclusion in the Michelin Guide, a Repsol Sun, and the 2024 Mesa Marcada Award for Best Service. Her cooking merges French technique with Portuguese soul, delivered with irreverent charm.

I’ve chosen places for their singular identity, trying to offer as broad a scope as possible of what Lisbon’s food and bar scene is today. Today, it’s a scene filled with both locals and foreigners defending their cultural identity—or redefining it—working around art, music, tradition, sustainability, conviviality, accessibility, and inclusivity. An eclectic mix of local institutions and outsider newcomers.
