Miguel Azevedo Peres
Chef Miguel Azevedo Peres is a gastronome and restaurateur who founded Pigmeu, a Lisbon restaurant dedicated for over a decade to serving the whole Alentejano pig—nose to tail, in a deeply Portuguese way. The restaurant holds a Michelin Bib Gourmand and one Repsol Sun.
Pigmeu's informal sharing menu features pigs raised free-range in the Montado, feeding on cork oak acorns. A single animal serves over 300 guests, with every part utilised alongside seasonal vegetables, bringing pork offal back to the table.
Beyond his restaurant, Miguel is part of World Central Kitchen's chef corps, working with José Andrés to provide meals in crisis zones. An avid reader and advocate for sustainability, he champions the essential connection between gastronomy, culture, and politics.
