Chef Tiago is a Japanese cuisine chef and restaurateur known for his purist, disciplined approach to contemporary Japanese gastronomy in Portugal.

He leads Kappo, an intimate counter restaurant offering omakase menus, listed in the Michelin Guide since 2022. Rooted in the kappo philosophy—where the chef cooks, serves, and interacts directly with guests—his work emphasizes seasonality, precision, and respect for traditional techniques with modern sensibility.

Beyond Kappo, he oversees multiple Japanese projects including izakaya-style concepts in Lisbon and Cascais, where high-level craftsmanship meets casual, energetic dining. His culinary vision remains consistent: clarity over excess, technique over trends, and creativity grounded in purpose.

A huge seafood Sunday lunch at Marisqueira Nunes is highly recommended, especially the Lavagante à Basca.
