Among the memorable creations, one dessert stands out: the inventive Ramen Conventual. It playfully deconstructs expectations with a "false spaghetti" of egg yolk and sugar, accompanied by a fresh coriander sorbet, slices of preserved peach, and a delicate miso-and-vanilla syrup—a dish that perfectly captures the restaurant's spirit of curious, respectful innovation.
